Fresh Homemade Spiced Apple Cider

While many places around the world consider traditional apple cider to contain alcohol, in North America apple cider is ¬†defined by the cooking process and the inclusion of a spice mixture (which differentiates it from apple juice). For those wanting to add a little spike to their apple cider (what we would call ‘hard apple cider’) we recommend honey whiskey or a spiced rum.

Making your own delicious apple cider is easy and fun. With few ingredients it is also very cost effective.

Apples, water and spices are all you need.

We recommend using flavourful organic apples, but you can use any that are available to you. Remember to peel your apples (especially if they are non-organic) and remove the cores. We want the sweetness of the fruit without the bitterness from the seeds. This recipe also works well with pears – we’ve stuck to a traditional apple cider recipe below, but feel free to experiment.

While the recipe works well on the stove we highly recommend using a slow cooker or crock pot. Do not use a heavy or sealed lid, the mixture will steam and some of the water will need to evaporate. As the water evaporates you can add more until the density of flavour is right for you.

  1. Skin and slice apples, removing the core and seeds. Put them in your slow cooker, dutch oven, or crockpot leaving enough room to ensure the lid fits securely, leaving at least an inch of space at the top - the apples will expand a bit as they cook, so leave enough room or you'll have an over flow.

  2. Add spices, honey, and lemon juice (optional).

  3. Fill up the pot with enough water to cover the apples.

  4. Cook on low heat for 6-7 hours. Stir occasionally. The apples will begin to break down. You may add more water if you wish - taste your mixture and see if you need to add more water to manage the flavour & intensity of the cider.

Strain out mixture entirely, or, for a thicker texture, pull out whole spices and use a hand blender to completely pulp the apples (adding more water to achieve desired concentration and consistency). Keep mixture on low heat or remove from heat, let cool and store in fridge. If you do strain out the apple pulp, it can be frozen and re-used as a sauce for roasted pork later on - delicious!

Recipe Notes

For a 'hard apple cider' version of the drink, add brandy, rum, or whiskey (we recommend Honey Whiskey) upon serving. Garnish with cinnamon or a slice of apple and enjoy alone, or next to a warm fire with a good book or great company.
